Ingredients
2 teaspoons ZSweet®
4 ounces ricotta cheese / part skim milk
4 ounces low-fat whipped cream cheese
1/2 tsp vanilla extract
1/4 tsp lemon zest
1/2 cup strawberries
2 squares graham cracker
Instructions:
In a food processor bowl combine ZSweet, ricotta and whipped cream cheese, vanilla and lemon zest.
Process until smooth. Cover and chill. Break up 1/2 graham cracker square in the bottom of a parfait glass. Spoon in a layer of the cheesecake mixture, crumble up another 1/2 graham cracker square for another layer & spoon in one more layer of the cheesecake mixture. Garnish with a sliced strawberry.
