Banana Bread

Servings: 10 slices


1 1/3 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/3 cup margerine (Earth Balance or Smart Balance® is recommended)
2/3 cup Zsweet®
2 large eggs
1 1/4 cup mashed very ripe bananas (about 3)
1/2 cup coarsely chopped walnuts


Have all ingredients at room temperature.  Preheat oven to 350°. Grease an 8 ½ x 4 ½  inch loaf pan. 

Beat margarine and Zsweet® together in a large bowl until light and fluffy, 2-3 minutes.  Mix in flour, baking soda and baking powder until it is the consistency of brown sugar.  Beat in eggs.  Fold in bananas and nuts until just combined.

Scrape the batter into the pan and spread evenly.  Bake 60 minutes.  Let cool in the pan for 5 minutes and then cool completely on a rack before serving.

Note:  The batter will seem underdone, let it cool for a few hours and it will be moist and delicious.
